Has the rush began?

No matter how organized I think I am, I always seem to get in a rush a week or so before Christmas.  This year I thought I had it under control, but nope, the rushing has started.

A few years ago, I started Christmas in January, and I kept at it.  Every month I completed something and packed it away.  I cannot tell you how amazing it was to have so much stuff ready and no rushing in December.  It was a relaxing enjoyable Christmas, and I had time to enjoy all the little things that I never seem to get to when I don’t do things ahead of time.

Today I am going to share one of my favorite recipes.  I am not a real big fan of cakes, but this one is a winner for me.

Piggy Cake

2 eggs, well beaten
1 cup sugar
1/2 cup milk
2 tbsp. soft butter
1 cup flour
1 tsp. baking powder
Warm milk on top of stove and add butter.  Let stand until melted.
Beat eggs well and add sugar.  Continue beating until well mixed.
Sift flour and baking powder once and add alternately with warm milk to egg mixture.
Pour into greased pant and bake in 350 oven for approximately 30 minutes.
Topping
5 tbsp brown sugar
2 tbsp millk
1 cup shreed coconut
3 tbsp butter
Place mixture in pot and bring to a boil.
When cake is baked, take out of oven, put topping on cake and put back in the oven until golden brown.
